it's thursday now. til today, that box has stayed shut tight, crammed into the back of the fridge along with leftover spaghetti and random condiments.
however, today when i got home from working out, those leafy greens were on my mind. in fact, as i was spinning away on the stationary bike at gold's i was busy taking inventory of what i had in the fridge, and what ingredients would make the perfect wrap.
by the taste of the final product, it seems i should work out hungry more often... some people get great ideas in the middle of the night.... mine come as I am pouring sweat and watching food network at the gym.
avocado poppyseed wrap
1 flat out wrap
2 cups mixed greens- i used spinach, arugula, and romaine
1 tbsp brianna's poppyseed dressing
1 tbsp dried cranberries
1 tbsp slivered almonds
1/2 medium avacado, diced
mix all ingredients together in a bowl, then spoon out evenly onto flat out. do your best to roll it up... eating some of the greens prior to rolling may be will be necessary.
